Everyone eats bread, yet barely any bakers still knead the heavy dough themselves. The dough production process has been industrialised. Aviateur asked Moekotte to do two things: to renew the existing installation and to increase its production capacity. A two-fold challenge for Moekotte. The high performance result was the design and installation of a dough production system, including visualisation software and the right control system concept. This meant that the project complied with the three essential requirements of the customer: flexibility, tracking & tracing and easy maintenance.
The goal was to use standard control components in so far as possible. Moekotte’s advice: opt for a Siemens S7-300 system, a touch panel for local operation and Citect SCADA PC as the central system. The latter offers four benefits: The ability to input, amend and download the master recipes and to see the process outcome. This also allows for all of the dosage measurements to be stored in an SQL database, including the recipe and ingredient name. The ideal input for tracking & tracing. The software is structured according to ISA-S88 and is ready for the addition of new ingredients in future.
Moekotte produced drawings for both the hardware and software engineering as well as for the panel construction. We deployed almost all of our expertise in this challenging, broadly-based project. The result in real terms is that De Aviateur, which is based in Broek op Langedijk, has a brand-new, state-of-the-art dosage measuring system, which is ready for any capacity increases that may be required both now and in the future.
